    arugula soup

    I’ve been making this soup for probably a decade and it’s still just as delicious and comforting every time. I know, arugula in a soup may sound weird. You’re probably thinking it will be too bitter. I promise it’s not! The leeks and potatoes balance it all out! Occasionally, like once every 2-3 years occasionally, I will get an incredibly bitter batch of baby arugula that ruins the soup, and I buy arugula ALL THE TIME so the chances of this happening to you are very slim. I really hope it doesn’t! This soup is one of my all time favorites and I hope you love it too!

    cashew cream

    This cashew cream is life changing, seriously. I could eat it by the spoonful. It is good on just about anything, as a dipping sauce, creamy pasta sauce, or dressing. Best of all, it takes only a few minutes of blender time and remembering to soak your nuts the night before. The first time I had cashew cream was at my local health food store in a veggie wrap so I have tried to recreate theirs. You can play around with the flavor if you like by adding a little vinegar, spices or nutritional yeast for “cheesiness”.

    sarah britton’s sorrel hummus

    Hummus is one of those things that’s super easy to make but I think most people just tend to buy it instead. It takes about 5 minutes to blend up a nice batch of hummus and there are so many options for variety! The hummus recipe I’m sharing today is made with chickpeas but you can also use any type of bean or legume like mung beans, white beans or lentils. Adding vegetables or different spices can completely change the flavor as well so you won’t get bored of dipping your vegetables in the same old stuff.

    valentine’s day beet soup

    I’ll be honest; I’m not one to celebrate Valentine’s Day. Roses and chocolate and a rushed dinner at a packed restaurant aren’t my thing. Ok, well I wouldn’t turn down ranunculus and organic 80% dark chocolate but I’d rather have it on a random day than a commercialized holiday. I am however, always for a nice relaxed dinner at home and I’m sure many of you are too, especially those with littles who can’t get a sitter. So if you’re staying at home with your love, here’s a delicious, festive (make-ahead) recipe that makes a lovely first course.

    comforting french lentil soup

    With the cold winter weather on the east coast I thought it would be appropriate to share my favorite lentil soup recipe. Like most soups, this one is much better the next day, so much so that I always make it a day in advance. I also thought it would be a good time to weigh in on what I think about the popular Paleo/Whole30 diet since those diets do not allow you to eat beans or legumes (and therefore lentils).
