spicy jackfruit tacos

I only tried jackfruit recently and let me tell you, I’m hooked! My husband and mother in law who are meat eaters, said they wouldn’t even know this wasn’t meat if I hadn’t told them. Please, give it a try! This taco recipe will definitely be in rotation in our house! I made my littles a deconstructed plate with the same ingredients. Keep scrolling for a picture!

recipe adapted from a cozy kitchen
serves 3-4

ingredients

1 tablespoon olive oil
1 yellow or white onion, peeled and roughly chopped
8 garlic cloves, roughly chopped
salt to taste
1 teaspoon freshly ground pepper
1 teaspoon dried Mexican oregano (I used fresh oregano because that’s what I had)
1 teaspoon ground cumin
1/2 tablespoon chipotle adobo sauce (more if you want it spicier or omit)
1 (15-ounce) can fire-roasted tomatoes or regular tomatoes
2 (10-ounce) packages of jackfruit, drained

ingredients for serving:

fresh minced cilantro
fresh lime
avocado
spicy pickled onions
tortillas , warmed (I love Siete which I get at Whole Foods Market)

directions

In large sauté pan, warm olive oil over medium heat. Add the chopped onion and garlic cloves, along with a pinch of salt. Cook until softened, about 5 minutes.
Transfer to the onion mixture to the blender, freshly ground pepper, salt to taste, oregano, ground cumin, adobo sauce and can of fire-roasted tomatoes. Blend for about 30 seconds, until smooth. Pour the mixture into the pot.

Meanwhile, chop up and shred the drained jackfruit. Transfer the jackfruit to the pan with the sauce and bring to a gentle simmer. Immediately return the heat to low and cover the pot; cook for about 20 to 25 minutes, until all of the flavors have been married. Give it a taste and adjust the salt according to taste.

to serve

Warm your tortillas according to instructions. Add a spoonful of jackfruit to the center of a warm tortilla. Top with cilantro, avocado, pickled onions and a squeeze of lime juice. Repeat until you build however many tacos you want!

Any leftover jackfruit can be kept in an airtight container in the fridge for up to 5 days.
