I love how modern kitchen appliances can turn healthful food into quick, easy, and delicious meals! One of my favorite kitchen appliances is our blender. My husband and I use it so often that my baby isn’t even fazed by it. Mostly we use it for smoothies, which are my go-to breakfast in the summer. Smoothies are great to take with you on your commute to work or drink with one hand while you hold a baby in the other.

Today I am sharing a simple peach and oat smoothie recipe. It’s like cold peach oatmeal and perfect for summer! Peaches are my favorite stone fruit and are a great source of potassium, carotene and flavonoids (antioxidants). Potassium is good for regulating fluids in our bodies, protecting against cardiovascular disease and for bone health to name a few. Beta-carotene supports eye health and flavonoids help reduce inflammation.

For any breastfeeding mommas out there, oats are a galactagogue, which means they promote your milk supply. They are also an excellent source of manganese, molybdenum and fiber as well as B vitamins and other minerals.

Frozen bananas make this smoothie sweet and creamy and are a good source of vitamin B6, manganese, vitamin C, potassium, fiber, biotin and copper. I recommend peeling ripe bananas before freezing them so that you can easily throw them in the blender for smoothies. There is always a freezer bag full of ripe bananas in my freezer for quick smoothie making.

serves 1-2

ingredients

1 frozen ripe banana
2 ripe peaches, quartered, pits removed
1 cup unsweetened almond milk (or other plant milk of choice)
1/4 cup gluten free rolled oats
1 tablespoon raw cashew butter (optional)

directions

place all ingredients in blender and blend until smooth

    Perfect afternoon snack! Made a few modifications for what I had on hand…swapped out frozen banana for a fresh one and used frozen peaches and mangoes instead. Only flaw in this recipe – you’re toddler will steal half of it 🙁
