No CommentsRead moreThis recipe is very basic and you can add whatever you want to make it more interesting. A little cinnamon or maca or mushroom powder or all of the above! The coconut oil makes it nice and frothy and the only sweetener is dates which adds some fiber and iron! The cacao is a great source of antioxidants (think anti-cancer and anti-aging) and magnesium! red kale, radicchio, pepper & fennel salad
No CommentsRead moreSalads can become boring, but this one never disappoints, in fact it’s kind of addicting. This salad makes me think of the scene in Ratatouille where Remy is tasting food together and there are colors and fireworks going off. All the flavors in this salad just go so well together and create a whole new experience in your mouth! Plus, it’s super healthy and packed with vitamins and micronutrients! There’s no exact ratios for this salad but I tried to give a general idea of what I normally throw together. My husband and I eat HUGE salads which is why I wrote serves 2-4, but it’s a lot of salad and will most likely serve 4-6 if it’s not a main course. roasted cauliflower 3 ways
No CommentsRead moreCauliflower is probably one of the most overlooked vegetables and has been given a bad rap since the only way our parents knew to cook it was steam it in a pot, bleh. I distinctly remember the cauliflower being the only thing left on the crudite platter at every single family gathering, so it must be gross right? Turns out, it is delicious if it’s roasted! I could literally eat an entire roasted cauliflower in one sitting, it’s that good!

No CommentsRead moreToday I’m sharing my new favorite salad with shaved brussels sprouts. I have been obsessed with eating raw shaved brussels ever since this recipe came out in 2009. If this concept is new to you I know you’re skeptical, but believe me this is delicious and I’ve had a handful of people ask me for the recipe since I’ve been bringing it everywhere with me! There’s not really anything healthier than eating raw cruciferous vegetables so why not make them taste amazing!

valentine’s day beet soup
No CommentsRead moreI’ll be honest; I’m not one to celebrate Valentine’s Day. Roses and chocolate and a rushed dinner at a packed restaurant aren’t my thing. Ok, well I wouldn’t turn down ranunculus and organic 80% dark chocolate but I’d rather have it on a random day than a commercialized holiday. I am however, always for a nice relaxed dinner at home and I’m sure many of you are too, especially those with littles who can’t get a sitter. So if you’re staying at home with your love, here’s a delicious, festive (make-ahead) recipe that makes a lovely first course.

comforting french lentil soup

Like most soups, this one is much better the next day, so much so that I always make it a day in advance. I also thought it would be a good time to weigh in on what I think about the popular Paleo/Whole30 diet since those diets do not allow you to eat beans or legumes (and therefore lentils).

winter salad with blood orange & avocado
No CommentsRead moreAs if the power of whole foods on their own wasn’t enough to excite me, there are some amazing studies being done on the synergy of food! Hort Research in New Zealand did a study showing that if you combine berries and chocolate, you absorb three times the amount of antioxidants than if you were to eat those two foods separately. Today I want to specifically talk about how adding healthy fats to a salad can boost your carotenoid (antioxidant) absorption.

eggnog smoothie
No CommentsRead moreToday I’m sharing a super simple eggnog smoothie with you, except with no eggs or milk, and it is still delicious! Feel free to tweak the recipe however it suits you. I like to add some cashew butter to make it more filling and sometimes lucuma powder which adds a little maple like sweetness. Lucuma is a Peruvian fruit and adds protein, beta-carotene, iron, zinc, B3 and calcium to the mix. I’d love to hear what you think of this smoothie!

If you know you like the flavors of ginger and turmeric you will love this drink, but if you don’t like the spicy bite of ginger and turmeric this may not be for you.
