No CommentsRead moreThis recipe definitely does not fall under an easy weeknight meal like most of my other recipes do, but it is so delicious I had to share. It’s perfect for Thanksgiving or a first course for a dinner party. Once I year, I lovingly, painstakingly peel fresh chestnuts to make this soup because it’s that good!! Peeling fresh chestnuts is a labor of love, they just have a mind of their own. Some come out of the shell perfectly and others just refuse. This method of peeling generally works pretty well but I never have an easy time no matter which method I’ve used. I’ve seen pre-peeled chestnuts before but I’ve never used them for this recipe so if you try them let me know how the soup turns out!

arugula soup
No CommentsRead moreI’ve been making this soup for probably a decade and it’s still just as delicious and comforting every time. I know, arugula in a soup may sound weird. You’re probably thinking it will be too bitter. I promise it’s not! The leeks and potatoes balance it all out! Occasionally, like once every 2-3 years occasionally, I will get an incredibly bitter batch of baby arugula that ruins the soup, and I buy arugula ALL THE TIME so the chances of this happening to you are very slim. I really hope it doesn’t! This soup is one of my all time favorites and I hope you love it too!

summer tomato gazpacho
No CommentsRead moreI am all about easy, no-cook, seasonal meals in the summer time. Most of us are probably busier than normal and nobody wants to turn the oven or stove on when it’s 90 degrees out. Today’s recipe is a simple cold soup called gazpacho that takes minutes to throw together but tastes amazing! It’s a perfect light lunch or appetizer and a great way to use up the abundance of tomatoes growing in your garden (if you have one) or from the farmer’s market.

valentine’s day beet soup
No CommentsRead moreI’ll be honest; I’m not one to celebrate Valentine’s Day. Roses and chocolate and a rushed dinner at a packed restaurant aren’t my thing. Ok, well I wouldn’t turn down ranunculus and organic 80% dark chocolate but I’d rather have it on a random day than a commercialized holiday. I am however, always for a nice relaxed dinner at home and I’m sure many of you are too, especially those with littles who can’t get a sitter. So if you’re staying at home with your love, here’s a delicious, festive (make-ahead) recipe that makes a lovely first course.

comforting french lentil soup

Like most soups, this one is much better the next day, so much so that I always make it a day in advance. I also thought it would be a good time to weigh in on what I think about the popular Paleo/Whole30 diet since those diets do not allow you to eat beans or legumes (and therefore lentils).

a simple thai zucchini soup
No CommentsRead moreThere comes a time every September when I find myself in a food rut. Summer produce is still going strong but nights are cool and I crave change. Although autumn produce is starting to show up at the farmer’s market and in my garden, I’m not quite ready to let go of summer. Somehow I make the transition with warm summer soups and cold autumn smoothies. This thai spiced zucchini soup is perfect for cool summer nights. I like to spoon it over quinoa (a complete protein) to make it a filling meal. Making a large batch of quinoa in the beginning of the week allows for a quick add on to weeknight meals.
