All you have to do is roast it for an hour, scrape it with a fork, and you have sweet buttery spaghetti! It is packed with antioxidants in that bright yellow color. 1 cup of squash will provide you with 59% of your daily vitamin A and 26% of your daily vitamin C.

2 CommentsRead moreThese snack balls are perfect for a pre work out snack, post work out recovery, lunch box treat, or in my case “need calories for breastfeeding” snack. They are packed with protein (4-5 grams per ball), good fats and minimal natural sugar from the dates which you can certainly omit if you don’t want any sugar. I’ve made these with sunbutter so that they are allergy friendly but you can use whatever nut butter you have on hand (peanut, cashew, almond, etc).

When I make these for other people I always ask them what they think they’re made out of and no one ever guesses the secret ingredient… BEANS! Yes, beans… packed with protein, fiber, and cancer fighting, blood sugar lowering, and stroke reducing properties! The high fiber content in beans prevents blood sugar levels from rising rapidly after a meal as well as lowering cholesterol levels. In other words, you can feel really good about eating one of these brownies! I would love to hear what you think of them!

No CommentsRead moreI often forget how easy and delicious kale chips are! The big kale chip hype was probably ten years ago but they never get old. They only take about 5 minutes prep and 15 minutes oven time! Also, for those of you who have never had homemade kale chips, don’t knock them until you’ve tried them! They are perfectly airy, crispy and salty and I bet you won’t be able to stop eating them. You can add whatever flavors you choose like Za’Atar seasoning, lemon, tamari or even a cashew “dressing”. The options are endless.

Studies have shown that countries with the lowest consumption of dairy also have the lowest rates of osteoporosis and hip fracture. Dairy is acidic to our bodies, which signals calcium to be released from our bones to alkalize our blood, in turn creating weak bones (the opposite of what most people think). Approximately 75% of the world’s population do not even have the digestive enzymes to break down dairy causing indigestion, bloating, diarrhea, and wreaking havoc in the gut. Dairy is also associated with increased risk of cancer as well as causing chronic ear infections (especially in children), sinus issues, eczema and acne.

No CommentsRead moreI am all about easy, no-cook, seasonal meals in the summer time. Most of us are probably busier than normal and nobody wants to turn the oven or stove on when it’s 90 degrees out. Today’s recipe is a simple cold soup called gazpacho that takes minutes to throw together but tastes amazing! It’s a perfect light lunch or appetizer and a great way to use up the abundance of tomatoes growing in your garden (if you have one) or from the farmer’s market.

make ahead collard wrap with cashew cream
2 CommentsRead moreIt can be challenging to bring a healthy, mess free, utensil free meal on the go. This wrap is perfect for plane rides, beach days, hikes, etc. Since there’s no bread or flour tortilla, there’s nothing to get soggy! The collards are used in place of bread and are much healthier too! Feel free to put whatever vegetables you have on hand in this wrap. If you have a nut allergy, you can substitute hummus for the cashew cream. The cashew cream is amazing though, so don’t skimp on it if you don’t have an allergy to cashews! You’ll probably want to eat it plain with a spoon.
