A healthful dinner in 10 minutes? It’s actually doable! One of my go to dinners (especially when my husband isn’t home to help with dinner or the littles) is pasta! Lentil pasta or whole wheat einkorn pasta are my go-tos. Stay away from white pasta that is stripped of the nutrients and stick with whole food versions instead! My favorite brands are Tolerant and Ancient Harvest POW!, both gluten free options, and Jovial whole wheat einkorn (the only non-hybridized wheat and often digested with no issues by gluten sensitive (not celiac)). Tolerant has one ingredient (lentils!) and comes in penne, rotini, elbows and shells. POW! is a mix of lentils and quinoa. I HATED whole wheat pasta up until recently when I tried Jovial’s. I don’t know if my taste buds are just changing or if it really is less “whole wheat” tasting, but I have really been enjoying it! Look for sauce with no added sugar and ideally no added salt. Throw some spinach in or steam some frozen veggies on the side. I love adding a vegan parmesan on top too!

1 box your favorite pasta (see above for recommendations)
1 jar tomato sauce (no sugar added)
easy vegan parmesan

directions

cook pasta according to directions on box. strain and add as much sauce as you like. warm on medium heat. top with vegan parmesan!
