Ok, I know it isn’t actually cheese but it definitely gives that lightly salty and cheesy taste we all know and love on pasta or in pesto. It’s a great pantry (fridge) staple to sprinkle on veggies or pasta to make it a little more interesting!

easy vegan parmesan
ingredients
¾ cup raw cashews or almonds (sunflower seeds for allergy friendly)
¼ cup nutritional yeast
1 teaspoon sea salt
1 teaspoon lemon zest (optional)
directions
In a food processor or the dry blade container of a high speed blender, combine the raw nuts, nutritional yeast, salt, and lemon zest if using. Pulse until you have a finely ground mixture. Store leftovers in fridge.
