Lazy chocolate lovers, this post is for you. These easy four-ingredient raw cookies are perfect to snack on or have for dessert. They are packed with healthy fats, biotin and vitamin E from the almonds, fiber and iron from the dates, and antioxidants, magnesium and iron from the cacao. This recipe calls for raw cacao powder because the beans are milled at low temperatures to protect the nutrients and flavor. If you tend to like super sweet desserts, you may want to add an extra date or two.
raw cacao bites
ingredients
1 cup raw *almonds
12 pitted medjool dates
3 tablespoons raw cacao powder
3 tablespoons raw cacao nibs
directions
in food processor, grind first three ingredients into a fine meal. if the mixture is not sticky when you press some together with your fingers, add a tablespoon of water and pulse a couple times.
add cacao nibs and pulse again until combined
press mixture onto flat surface into 1/2 inch thickness and use a cookie cutter to cut out shapes. i made 25 bites using a 1.5 inch round cookie cutter. alternatively, you can use a butter knife to cut into squares or roll into balls using the palms of your hands.
refrigerate or freeze for 20 minutes to harden
store in refrigerator for up to a week
*soaking almonds overnight in filtered water sparks the sprouting process which neutralizes natural phytic acid (which can interfere with absorption of nutrients). rinse almonds to remove phytic acid residue

Until I saw your note at the bottom about rinsing the soaked almonds, I hadn’t even realized you were supposed to soak raw nuts overnight! Definitely a helpful, healthy tip to know. Thanks!

Finally got this recipe right! If you have a blender that doesn’t work very well like mine, I suggest you blend your almonds and cocoa nibs first. Then add the cocoa powder and cut up pieces of date. I needed 2 tablespoons of water, since I didn’t soak my almonds first.
