Today I’m sharing my first green smoothie recipe so far and a quick blog post because it’s been a crazy week. If you know me at all, you know I am a huge proponent of green smoothies. It’s such an easy and delicious way to sneak greens into your morning routine. It takes a few extra minutes in the morning and you can take it with you on the go. Also, I have never met a child who doesn’t love smoothies. If you’ve never had a green smoothie before, I think this is a good one to start with because you can’t even taste the spinach. If you’re a green smoothie aficionado you may want to add some kale, a handful of frozen zucchini or moringa powder to this one.
As I’ve mentioned before, I like to keep a bunch of peeled ripe bananas in the freezer for smoothies, as well as frozen greens. To save money, buy a big family pack of organic spinach and freeze it.
Mint is a very hardy herb and grows well in the ground or in a pot. I have so much growing in my garden that I never have to buy it.
For those of you unfamiliar with matcha, it is a powder made from green tea. It is expensive but a little bit goes a long way. Consuming green tea regularly has been linked to reduced risk of heart disease, stroke, lung cancer, breast cancer, prostate cancer, diabetes, and all-cause mortality! So you can feel really good about drinking this smoothie!
matcha mint smoothie
serves 1
ingredients
1 cup unsweetened almond milk (or other plant milk of choice)
1 ripe frozen banana
1 giant handful organic spinach
1/2 cup loosely packed mint
1 teaspoon organic matcha powder
1 teaspoon vanilla extract (make sure no added sugar)
directions
add all ingredients to blender and blend until smooth. enjoy immediately.
